Long before refrigerators, before germ theory, and before anyone understood why food went bad, someone discovered that submerging vegetables in salt water prevented that rot and transformed them into something that lasted for months. That technique, known as lacto-fermentation, is one of the oldest technologies humans ever developed, predating writing, the wheel, and possibly agriculture itself.

The process works through a microscopic competition: salt-tolerant Lactobacillus bacteria, naturally present on vegetable surfaces, thrive in brine while harmful organisms die off. The Lactobacillus feeds on sugars and produces lactic acid, dropping the pH to levels acidic enough to kill nearly everything else, preserving the food without heat or artificial chemicals.
